Tuna Salad

Ingredients:

1 cup chopped lettuce 
1/2  can tuna with water
1 small tomato cut into cubes
1/2 cucumber cut into slices
6 pieces black olives
1 tablespoon low fat feta cheese cut into chunks
1 green onions, cut into rings (optional)
2 tablespoons fresh cilantro, chopped

For the Dressing
1 tablespoon of  olive oil
1/2 tablespoon vinegar
2 tablespoons lemon juice
1/2 clove garlic peeled and minced (if desired)
1 teaspoon oregano
Salt and black pepper to taste

Preparation:
  • Mix all dressing ingredients in bowl, add salt and pepper to taste.
  • Place the dressing in the bottom of the jar, layer the salad ingredients (tuna, cucumber, tomato, black olives, lettuce, green onion, cilantro and feta cheese crumble).
  • Place the lid on and store in the refrigerator until ready to eat.
  • Shake well before eating.
