Chickpea and Quinoa Salad 

Ingredients:

1/2 cup lettuce
¼ cup  avocado cut into cubes
1/2  carrot shredded 
1/2 cucumber ; cut into slices
¼ cup cooked chickpeas
¼ cup cooked quinoa
1 tablespoon fresh dill
1 tablespoon fresh parsley
2 tablespoons pomegranate seeds
1 tablespoon pumpkin seeds

Dressing:

1 tablespoon pomegranate syrup
1 tablespoon olive oil
2 tablespoons lemon juice
Salt and pepper to taste

Preparation:
  • Mix all the dressing ingredients in a bowl, add salt and black pepper as a preference.
  • Place the dressing in the bottom of the jar. Layer the salad ingredients (chickpea, cucumber, carrot, quinoa, avocado, pomegranate, pumpkin seed, lettuce, parsley and dill).
  • Place the lid on and store in the refrigerator until ready to eat.
  •  Mix the salad before eating.
